clean and slice up your favorite veggies - onion rings, potato slices, sweet potato slices, pepper slices, broccoli, cauliflower, carrot sticks, whole green beans, etc. Make up a medium-thin batter of chick pea flour and water, adding water a little bit at a time. When the batter is the consistency of thin pancake batter, it's ready to dip in your veggie bits and fry them up in oil. The batter will magically puff up as if you'd added eggs to it.

serve with soy sauce, chutney, hot sauce or any other dipping sauce
