Soda water is created when carbon dioxide gas is forced into plain water, under pressure. This process is commonly known as carbonation.

The resulting liquid is a favourite to create mixed drinks, and is also one of the most refreshing beverages when served plain. The gas bubbles in the water impart a really interesting sharp flavour on the palate that is capable of cutting through greasy or fatty foods. Served with a chunk of fresh lemon or lime, you have an inexpensive, healthy, and delicious summer drink.

Soda water is also an excellent emergency treatment for spills on carpet -- the gas bubbles lift a lot of the potential stain out of the fibres, if applied quickly and liberally.
