Egg Whites at Room Temperature
¼ Teaspoon
Salt
¼ Teaspoon
Cream of Tartar
1 Teaspoon
Vanilla
1½ Cup of
Sugar
6 oz Package of
Chocolate Chips
1 Cup
Chopped Nuts
Beat egg whites until foamy, add salt, cream of tartar and vanilla. Any kind of meringue can be challenging to prepare the first few times, once you get the knack it's a real achievement and you will become the envy of many a nouveau chefs. Doing this by hand can take from 15 to 20 minutes to get the right consistency. A small electric beater would be ideal. Beat until soft peaks begin to appear. Now add sugar a little at a time, until soft peaks form. Fold in chocolate chips and nuts. Drop on cookie sheet lined with wax paper. Bake at 300º for 35 minutes.
Yields 6 dozen.
Optional Substitution: Butterscotch Chips and Blanched Almonds for chocolate chips and walnuts.
