Poitou. The cheese is (naturally) of
goat's milk, soft, and slightly acidic and nutty. When young, the interior cheese is soft, becoming hard and brittle when aged. Chabichou du Poitou arrives at market with a blue-grey
mold covering a soft white mold. The
