Tofushi and Rice
This tasty dish is a simple pleasure for the Vegetarian Diet. Easy to serve up, it is perfect for quick and healthy meals on a busy day.
Ingredients:
· 1 Package (10-12 Ounces) Firm Silken Tofu - Cubed
· 2 Cups Whole Grain Rice
· 1/4 Cup Chopped Green Onion
· 6 Tbsp Rice Vinegar
· 5 Tbsp Cane Sugar
· 1/4 Tsp Lemon Juice
· Salt - To Taste
Directions:
Slightly warm vinegar in a microwave for 10 seconds. Add the sugar and lemon juice and stir till the sugar is dissolved. Split in two equal portions. In a small bowl, marinade the cubed Tofu in half the mixture for 10-15 minutes. At the same time, boil the rice until tender, and drain. Mix the remaining half of the juices to the rice. In a skillet over medium heat grill the Tofu mixture and green onion until the Tofu evenly browned on all sides. Salt to taste. Serve over rice with a nice Moscato wine.
